Ingredients:
- 1 tbsp olive oil
- 1/2 lb Italian sausage
- 1/2 lb bacon, cut into small pieces
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can cannellini beans, drained and rinsed
- 4 cups chicken broth
- 1 small head of cabbage, thinly sliced
- 1/4 cup half and half
- 1 tbsp The Classic all purpose seasoning
- 1 tbsp Estes Ave. burger seasoning
Directions:
1. In a large soup pot on medium heat, add olive oil and sausage. Break up the sausage and cook until brown. Remove and set to the side.
2. Add bacon and The Classic seasoning. Render the bacon down until it's crispy. Remove and set to the side.
3. Add onion to the pot and let it soak up some of the bacon grease. Sweat down. Then add your carrots and celery. Season with Estes Ave and add in minced garlic. Mix well.
4. In a food processor, puree half of the cannellini beans with a little bit of chicken broth. This will be used to thicken the soup.
5. Add in the rest of the chicken broth to deglaze the pan. Add the cannellini beans and cabbage. Mix until well combined. Stir in the pureed cannellini beans. Let simmer for at least 15 minutes.
6. Add the cooked sausage and bacon and give it a good mix. Serve and Enjoy!
