Ingredients:
- 1 Tbsp Butter
- 3 Carrots, Diced
- 1 Small Onion, Diced
- 3 Cloves Garlic, Minced
- Fire & Smoke BBQ Company Windy City Rub
- Fire & Smoke BBQ Company The Classic Seasoning
- 8 Cups Chicken Broth
- 1 Cup Orzo Pasta
- 3 Cups Cooked Chicken Thighs
- 3 Eggs
- 4 Lemons, Juiced
- 2 Cups Fresh Spinach
- Dill (Optional)
Directions:
- Season chicken thighs with Windy City. Grill until it reaches an internal temp of 165F.
- Heat large soup pot over medium heat. Add butter and The Classic. Add carrots, onion and garlic. Stir frequently, and sauté until tender.
- Add chicken broth and bring to a simmer. Add orzo pasta and cook for 3-4 minutes. Then, stir in the cooked chicken and remove from heat.
- Whisk eggs and lemon juice in a separate bowl. Warm the mixture slowly, but don’t cook the egg. Do this by adding spoonfuls of soup into the mixture. Then add it back into the soup pot, stirring constantly.
- Add your spinach, The Classic to taste, and dill. Serve and Enjoy!
