Jalapeno Lime Chicken Soup

Ingredients:

- 2 tbsp olive oil

- 2 jalapenos, ribs and seeds removed, minced

- 1/2 yellow onion, minced

- 4 cups chicken broth

- 2 tbsp Windy City bbq rub

- 2 tbsp The Classic all purpose seasoning

- 1 pound boneless skinless chicken tenderloins, cooked and chopped

- 1 can white beans, drained and rinsed

- 2 limes, juiced

- fresh cilantro (optional)

 

Directions:

1. In a soup pot on medium heat, add olive oil and onions. Add Windy City bbq rub and saute until brown. Add jalapenos and The Classic seasoning and stir.

2. Add chicken broth and bring to a simmer. Add white beans and lime juice. You can also add the full lime to boil into the broth and fully incorporate.

3. Let simmer covered for 20 minutes. Add in the chopped chicken and give it a good mix. Remove limes if you added them.

4. Top with cilantro if desired. Serve, and enjoy!
