Jalapeno Cornbread Poppers

Ingredients:

- 12 jalapeno peppers, halved and seeded

- 1 box Jiffy cornbread mix

- 1 tbsp Windy City rub

- 1 egg

- 1/3 cup milk

 

Directions:

1. Preheat smoker, grill, or oven to 425F. Prepare the jalapenos.

2. In a small bowl, combine the Jiffy mix with the egg and milk. Stir until well combined.

3. Arrange the jalapenos on a baking sheet. Spoon 1-2 tbsp of the cornbread mixture into each jalapeno half. Sprinkle Windy City on top.

4. Cook for 15-20 minutes or until cornbread is firm. Serve and Enjoy!
