Ingredients:
- 1 1/2 cups warm water
- 2 1/4 tsp instant dry yeast
- 1 tsp salt
- 1 tbsp granulated sugar
- 1 tbsp unsalted butter, melted
- 4 cups all purpose flour
- 1/2 cup baking soda
- 9 cups water
Directions:
1. In a small bowl, whisk the yeast into warm water. In a separate small bowl, add salt, brown sugar, and melted butter.
2. In a medium bowl, add 3 cups of flour. Slowly add in the ingredients from step 1 and mix until dough is thick. Add more flour as needed until the dough is no longer sticky.
3. Turn and knead the dough on a floured surface for 3 minutes and form into a ball shape. Cover lightly with a towel and let rest for 10 minutes.
4. In a medium pot, add baking soda and water and bring to a boil. Preheat over to 400F as well.
5. Cut the dough ball into 8 equal parts. Roll the dough pieces into long thin ropes. Twist each rope into a pretzel shape.
6. One at a time, boil your pretzels for 20 seconds. Use a slotted spatula to remove from the water and place onto a nonstick baking sheet. Repeat this step with all of the pretzels. Sprinkle Estes Ave. on top of the pretzels.
7. Bake for 10-12 minutes or until golden brown. Remove from the oven. Serve and Enjoy!

I made these the other day and they turned out so good!!! The mustard seeds give a nice crunch to the soft pretzels. It’s almost like a better version of an everything bagel seasoning.
