Ingredients:
- 1 tbsp olive oil
- 1 cup onion, diced
- 3 cloves garlic, minced
- 1 tbsp Estes Ave. burger seasoning
- 1 tbsp The Classic all purpose seasoning
- 2 tbsp tomato paste
- 32 oz chicken stock
- 2 14.5 oz cans diced tomatoes
- 1 lb tortellini, cooked
- 2 cups cooked chicken, chopped
- 2 oz spinach leaves, roughly chopped
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese
Directions:
1. Season chicken with The Classic all purpose and cook until it reaches an internal temp of 165F. Remove and chop. Also cook tortellini in a separate pot until al dente.
2. In a soup pot, add olive oil and onions. Saute over medium heat. Add garlic and Estes Ave. seasoning. Mix well.
3. Add tomato paste, diced tomatoes and chicken broth. Simmer until flavors are fully incorporated. Add back in the cooked chicken and stir.
4. Add in the chopped spinach and mix. Then, slowly add the heavy cream while stirring.
5. Put the cooked tortellini in a soup bowl and pour the soup over it. Add parmesan cheese as a garnish. Serve and enjoy!!
